Curry Braised Chicken
Ingredients:
- Chicken pieces………250 grams
- Salt………5 grams
- Potatoes………400 grams
- Granulated sugar………15 grams
- Curry paste………50 grams
- MSG………3 grams
- Minced garlic………10 grams
- Sesame oil………10 grams
- Minced ginger………5 grams
- Cooking wine………15 grams
- Chopped chili peppers………5 grams
- Damp starch………50 grams
- Chopped onions………25 grams
- Peanut oil………500 grams
Cooking Method:
- Wash the chicken pieces, drain excess water, and mix with damp starch. Peel the potatoes, cut into large cubes, soak in water for 1 hour, and then drain.
- Heat peanut oil in a frying pan until it reaches 60% heat. Fry the potato cubes until golden brown and fully cooked. Next, fry the chicken pieces until they are half-cooked. Remove and drain excess oil.
- Leave a small amount of oil in the pan, sauté minced garlic, chopped chili peppers, chopped onions, and minced ginger until fragrant. Add curry paste, stir-fry until aromatic, then add the chicken pieces and potatoes. Pour in cooking wine, add broth, salt, MSG, granulated sugar, cover and simmer until chicken and potatoes are tender.
- Thicken with damp starch, then stir in sesame oil and a little peanut oil. Stir well, transfer to a serving dish and serve hot.
