Brandied Chicken and Mushrooms in Oyster Sauce

Ingredients

- 8 ounces fresh button or cremini mushrooms, stemmed and sliced (about 2 cups)
- 1/4 cup oyster sauce
- 1 tablespoon sweet soy sauce (see page 24)
- 1/2 teaspoon salt
- 1/2 teaspoon ground white pepper
- 2 tablespoons brandy
- Chopped green onions for garnish
Instructions
1 Prepare Ingredients:
- Heat a large wok or skillet over medium-high heat for 1 minute. Add vegetable oil and heat until it shimmers.
- Add minced garlic and slivered ginger. Cook until fragrant, about 30 seconds.
2 Cook Onion:
- Increase heat to high. Add sliced onion and cook until soft and translucent, about 3 to 4 minutes.
3 Cook Chicken:
- Add chicken pieces to the wok. Stir and cook until chicken is no longer pink, about 2 to 3 minutes.
4 Add Mushrooms and Sauces:
- Add sliced mushrooms to the wok. Stir in oyster sauce, sweet soy sauce, salt, and white pepper. Mix well.
5 Simmer with Brandy:
- Pour brandy into the wok. Simmer over medium-low heat until chicken is cooked through, about 2 to 3 minutes.
6 Finish and Serve:
- Sprinkle chopped green onions over the dish.
- Serve hot with freshly steamed rice and a vegetable side dish.
