Ingredients
- 1/4 cup plus 1 tablespoon brown sugar
- 1/4 cup plus 1 tablespoon fish sauce
- 1/4 cup Korean red pepper flakes
- 5 to 6 cloves garlic, minced (2 tablespoons)
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame seeds
- 4 romaine lettuce hearts (1 pound), halved lengthwise
- 5 green onions, white and green parts, chopped
- 1 red Thai chili, cut into rounds
- 3 cups raw oysters, rinsed in salt water to remove any grit and drained (about 2/3 quart)
Instructions
1 Prepare the Marinade:
- In a large nonreactive bowl, combine brown sugar, fish sauce, Korean red pepper flakes, minced garlic, rice vinegar, and toasted sesame seeds. Mix well to form a coarse paste.
2 Mix Salad Ingredients:
- Add halved romaine lettuce hearts, chopped green onions, and sliced red Thai chili to the bowl with the marinade. Toss until the vegetables are evenly coated.
3 Incorporate Oysters:
- Gently fold in the rinsed and drained raw oysters into the bowl with the lettuce mixture. Ensure the oysters are well-coated with the marinade.
4 Marinate:
- Cover the bowl with plastic wrap and refrigerate the kimchi for at least 3 hours, ideally up to 12 hours, to allow the flavors to meld together.
5 Serve:
- Just before serving, give the kimchi a final stir to evenly distribute the flavors. Serve chilled.
