Start with shredded young green papaya. Add spicy thai chillies, garlic, tomatoes, citrus, MSG and fish sauce (± Nam Pha) to taste. To make it “Issan, or Laos Style” add the fermented fish juice (± P-laa), and mix it all together in a mortar and pestle. Eat with sticky rice, if you like, and enjoy.
