Kari Ajam

Ingredients

1.5kg chicken thigh fillet, cut into bite size pieces
½ kg potatoes, peeled and quartered
100g fresh red medium chillies, seeded
100g shallots, peeled and roughly chopped
25g garlic cloves, peeled
5 candlenuts
40g fresh turmeric, sliced
15g ginger, sliced
2 tbsp vegetable oil, plus extra for frying the curry paste
2 stalks lemongrass, bruised
25g galangal, roughly chopped
1 litre coconut milk
2 tsp ground cumin seeds
2 tsp dried ground coriander
1 tsp fennel seeds, roasted, then ground
1 cinnamon quill
1 whole nutmeg, crushed
5 cloves
15g shrimp paste, roasted and crushed
1 tbsp salt
4 tbsp sugar

Belado

Ingredients

5-6 shallots, chopped
1 medium tomato, chopped
300g red chillies, roughly chopped (long or small chillies, depending on desired strength, can be mixed)
Juice of 1 lime
2 tbsp salt
3 tbsp sugar
3 tbsp vegetable oil
Handful petai (‘smelly beans’) (optional)

This quantity of belado is sufficient for 1kg meat, seafood or vegetables

Bebek Betutu

How to make Indonesia Bebek Betutu, a recipe from SBS Food Safari show.

Ingredients

1 whole duck, preferably free range organic – just like Balinese ducks.
1 roll of banana leaves (optional) or aluminium foil for wrapping

Seasoning paste

10 shallots or 2 medium onions, chopped
1 head garlic, cloves peeled
4 candlenuts, crushed
2 tsp shrimp paste, roasted
1cm each of fresh galangal, ginger, and turmeric (plus an extra 1 cm of turmeric for duck washing water)
1 lemongrass stick, outer leaves removed, chopped
1 tbsp of palm sugar, grated
1 tsp black peppercorns, crushed
2 tsp coriander seeds, crushed
3 tbsp lime juice
3 kaffir lime leaves, finely sliced
2 tbsp peanut oil
2 tbsp water
3 tsp salt, to taste
3 red chillies, roughly chopped (optional)

Sate Daging

Serves 4

Ingredients

1 kg rump steak, cut into bite-size chunks
Wooden satay skewers, soaked in cold water for 1 hour

Marinade
1 medium sized onion, finely chopped
4 large garlic cloves, finely chopped
5 tbs kecap manis
2 tbsp peanut oil
½ tsp sea salt
½ tbsp palm sugar, grated
1 tsp ground coriander
