¼ cup vegetable oil
3 bay leaves
2 tsp whole cloves
3 black cardamom
1 tbsp green cardamom
1 piece cassia bark
1 tsp fennel seeds
4 small dried chillies
1kg red onions, sliced
½ tsp salt
1 tsp turmeric
1 tsp chilli powder
3 tsp ground coriander
2 tsp fresh ginger paste
2 tsp fresh garlic paste
1 tbsp chilli puree
2 tomatoes, chopped
1 tbsp tomato puree
1 kg cubed lamb leg or shoulder
2 tbsp chopped coriander leaves
Tomato wedge, julienned ginger and coriander sprig, to serve

1 litre water
1 tsp turmeric powder
6 cloves garlic, crushed
1cm piece ginger, crushed
Salt to taste
2 tbsp vegetable oil

2 tsp cumin seeds
2 to 3 dry chillies
8 to 10 curry leaves
Chilli powder
Pinch of asafoetida powder
200g chopped tomatoes

2 bunches (500g) English spinach
2 tbsp vegetable oil
1 tsp cumin seeds

6 cloves garlic, crushed
1 medium onion, finely chopped

225g paneer, cubed (Indian cottage cheese)

How to make Indian vegetable cutlets. A recipe from Manjula’s kitchen.

Ingredients

2 medium potatoes boiled peeled and mashed
1 cup chopped mixed vegetables (green peas, carrots, green beans, corn)
2 tablespoon chopped cilantro (green coriander)
2 chopped green chili (adjust accordingly to your taste)
1 teaspoon chopped ginger
1 teaspoon salt (adjust accordingly to your taste)
1 teaspoon mango powder
3 tablespoon all purpose flour (plain flour or mada)
1 cup bread crumbs
frying oil

How to make Indian Coconut Cardamon Burfi with video guide from SBS Food Safari show.

Ingredients

250g desiccated coconut
395g can sweetened condensed milk
10 cardamom pods – grind/crush seeds into a powder
Handful of pistachio nuts, roughly crushed

Directions

1. Mix 200g of the coconut and the remaining ingredients in a bowl.
2. Heat a non-stick pan on low heat and add mixture to the pan. Stir over low heat until the mixture starts to dry and rolls easily into a ball. Remove from the heat. Cool for 5 to 10 minutes until cool enough to handle.
3. Place the remaining coconut onto a plate. Using damp hands, roll the mixture into balls and then roll in coconut to coat. The coconut balls can be refrigerated for up to a week.
