How to make Shanghai style stir-fry eggplant with garlic and soy sauce, recipe by Chris Yan, from SBS Food Safari show.
Ingredients
500g Japanese eggplant (also known as Lebanese)
5 tbsp oil
1 large red chilli, roughly cut into chunks
2 cloves garlic, bruised
200ml water
3 tbsp dark soy sauce
1 tbsp sugar
2 tbsp water, extra

Ingredients
500g fresh calamari
2 tbsp self raising flour
1 tbsp oil
Cornflour
Vegetable oil, for deep frying
4 green shallots, chopped
2 cloves garlic, chopped
1 red chilli, chopped
2 tsp Shaoxing wine
Five Spice mix
1 tbsp ground ginger
1 tbsp celery powder
1 tbsp chicken stock powder
1 tbsp salt
1 tsp five spice powder
Directions
1. Clean calamari by pulling the tentacles from the body. Wash out the tube and remove the clear ‘backbone’. Remove the skin, if desired. Cut tentacles from the head and discard heads. Cut tubes into triangles, this helps them to curl during cooking.
2. In a bowl, mix self raising flour, oil and a little water to make a paste. Place calamari pieces and tentacles into the bowl and coat well. Then sprinkle each piece with enough cornflour until the pieces are dry.
3. Combine all ingredients for five spice mix and set aside.
4. Heat enough vegetable oil for deep frying in a wok. Add calamari, in batches and cook until golden and crisp. Remove with a wire basket or slotted spoon. Repeat with remaining calamari. Drain off oil.
5. Add shallots, garlic and chilli to wok. Cook for 30 seconds until aromatic. Return squid to wok and add 2 to 3 tsp of the five spice mix. Toss well to combine. Add Shaoxing wine, toss and serve immediately.
What are your favorite dim sum? If you are one of those that want to try something new and exotic, then the next time you are at your favorite dim sum restaurant, try ordering tripe, duck feet or chicken feet, and anything else that you have never thought of eating before. Of course, you can always play it safe and stick to the usual.
A few samples of Chinese soup, starting with beef tripe soup, following with duck soup, mixed soup, and ending with beef meat balls soup. Have your pick and see which one you like best.
If you are fond of squid and spicy food, then try steamed squid dim sum with spicy sacha sauce the next time you are at a Chinese restaurant. I found it to be quite delicious.
Cantonese Style General Tao. Cut the meat into 2*2*2 cm cubes, then cut the cucumber and tomatoes. Add some cut Welsh onion and garlic, Suchian pepper and hot peppers. Now make a sauce with Ketchup, minced garlic, sugar and salt.
Sauce ingredients:
- 4 spoons of Ketchup;
- 2 spoons of sugar;
- Half a spoon of soy sauce;
- 1 spoon of pineapple sauce;
- 1 spoon of white wine.
Fry soaked meat, then put starch and mix in the meat, deep fry the meat until it gets a light golden color. Then stir fry, starting out with the tomatoes, spring onion and the cucumber. Add wine and the sauce. More in this video!
