Ingredients

100g Glutinous Rice Flour (3 1/2 oz)
100g Soft Silken Tofu (3 1/2 oz). You can substitute Firm Tofu for Silken Tofu.
Water
2 tbsp Kinako (soybean flour)
1 tbsp Sugar
2 tbsp Black Sesame
1 tbsp Sugar
1 tbsp Sugar
1 tbsp Soy Sauce
1 tbsp Mirin

1 kg pumpkin
2 tbsp Sri Lankan roasted curry powder
2 medium red onions, finely sliced
3 green chillies, sliced
4 cloves garlic, finely sliced
½ tsp fenugreek seeds
1 tsp chilli powder
1 tsp turmeric powder
½ tsp mustard seeds
1 tsp ground mustard
2 cups coconut milk
2 sprigs fresh curry leaves
1-2 tsp salt
2 tbsp vegetable oil

Thickening

2 tbsp rice, roasted and ground
4 tbsp desiccated coconut, roasted

Ingredients

Dressing

1-2 tsp fresh red chilli – ground with mortar and pestle. Can be long or small chilli depending on heat preference
1 tbsp belacan – roasted in foil for about 20 minutes
2-3 tbsp palm sugar – sweeten to taste
2 tbsp Shrimp paste – note this is not belacan- this paste comes in a jar and can be purchased from most Asian grocery stores. It has a viscous consistency
2 tbsp tamarind (reconstituted)
Juice from ½ a lemon

Soup Stock: 1200ml Water (5 U.S. cup), 10cm Kombu Kelp (4 inch), 20g Dried Bonito Flakes (2/3 oz), 3 tbsp Soy Sauce, 3 tbsp Mirin

Note: Kombu Kelp and Dried Bonito Flakes can be substituted for granulated instant dashi.
