Ingredients

3 tbsp groundnut oil
8 large king prawns, de-veined, shelled (leaving tails on), heads removed
1 tbsp grated fresh root ginger
1 red chilli, de-seeded and finely chopped
½ onion, chopped
50g/2oz canned pineapple, drained and chopped
200ml/7fl oz pineapple juice
1 small handful chopped red and yellow pepper
1 small handful fresh beansprouts
salt and freshly ground black pepper
½ lime, juice only
honey, to taste
1 spring onion, finely sliced
steamed jasmine rice, to serve

Heston’s duck Confit is coated in a rich aromatic sauce and served with shiitake mushrooms. Serves 4. Preparation time 30 minutes. Cooking time 30 minutes.

Ingredients

For the mushrooms and aromatics
140g/5oz shiitake mushrooms (sliced 2cm/0.8in thick)
15g/½ ginger, finely sliced
50g/1¾oz spring onion (finely sliced)
25g/1oz minced shallot
5g/¼oz minced garlic
2g seeded and sliced Szechuan chillies (about 6)
2 Szechuan peppercorns (crushed)
1 small fresh red chilli (thinly sliced)

How to make Chinese Pork and Bamboo Shoot Stir Fry, Chinese Food Made Easy with Ching He Huang.

Ingredients:

1 tbsp groundnut oil
2 garlic cloves, finely chopped
3 dried Chinese mushrooms, pre-soaked in hot water for 20 minutes, drained and chopped
225g skinless pork fillets, cut into thin strips
1 tsp Shaohsing rice wine or dry sherry
1 tbsp light soy sauce
1 tsp dark soy sauce
A few pinches of five spice powder
100g pickled chilli bamboo shoots, drained and cut into strips
1 cucumber, peeled and deseeded and sliced lengthways using a potato peeler
Steamed jasmine rice to serve

Stir Fry Beef

Ingredients

400g beef eye fillet, trimmed
1½ tbsp potato starch
5 tbsp water
2/3 tsp salt
1½ tbsp peanut oil
2½ cups water, extra
½ tsp salt
6 fresh baby corn, halved diagonally
4 fresh shiitake mushrooms, sliced
60g snow peas, trimmed
4 yellow squash, sliced
4 – 5 cups oil, for deep frying
1 clove garlic, chopped
½ red capsicum, diced
1 tbsp oyster sauce
1 tsp sugar
½ tsp salt
½ tsp potato starch
1 tbsp Shaoxing wine

Cooking with Kai, how to make Pad Thai with tofu.

Ingredients:

2 cups rice noodle (soak in warm water for 15 minutes and then drain)
1 clove garlic (minced)
2-3 shallot (thinly slice)
2-4 oz tofu (sliced)
1-2 tbsp fish sauce
1 tbsp sugar
1-2 tbsp tamarind sauce or vinegar
1-2 tbsp dark or lite soy sauce
1 green onion (sliced)
1/2 cup beansprout

How to make Thai chicken basil stir-fry or Gka Prow Gkai, a recipe by Rachada Mahamontri, from SBS Food Safari show.

This recipe is for one of the favorite dishes of the Thai people. The chicken can be substituted with pork, beef, squid, shrimp or seafood. This dish is often served at breakfast with a deep-fried egg, sunny side up, on top. One particular favorite is to make it with ground pork and lots of Thai chillies. Make sure you use Holy Basil,, as it goes especially well with pork.

Ingredients

2-3 tbsp peanut oil, for stir-frying
10-12 cloves garlic, finely chopped
2-3 shallots, thinly sliced
500g boneless chicken thighs, cut into small pieces
10 Thai chillies, cut into very thin rounds
2 small kaffir lime leaves, finely shredded (optional)
2-3 tsp black soy sauce (the semi-sweet kind), or to taste
2 tbsp fish sauce, or to taste
1 cup fresh Thai holy basil, or Thai sweet basil leaves
and flower buds
Dash of ground white pepper
