1 tbsp groundnut oil
2 garlic cloves, finely chopped
3 dried Chinese mushrooms, pre-soaked in hot water for 20 minutes, drained and chopped

100g pickled chilli bamboo shoots, drained and cut into strips

This recipe is for one of the favorite dishes of the Thai people. The chicken can be substituted with pork, beef, squid, shrimp or seafood. 1 cup fresh Thai holy basil, or Thai sweet basil leaves
