Oyakodon

Ingredients

50ml Dashi Soup (1/5 u.s. cup)
1 tbsp Soy Sauce
1/2 tbsp Sake (Sake was left out on the list of ingredients in the video)
1/2 tbsp Sugar
1/2 tbsp Mirin
1/2 Small Onion
85g Chicken Meat (3 oz)
2 Eggs
10 Japanese Wild Parsley (Mitsuba)
200g Rice (7 oz)

How to make Pakistani Haleem, a video recipe from SBS Food Safari show.

Ingredients

½ cup wheat grain, crushed and soaked in water for 1 ½ hours
1 kg beef or lamb (on the bone)
½ cup each of channa dhal, urud dhal, mung dhal and barley soaked overnight and drained
2 tbsp garlic, crushed to a paste
2 tbsp ginger, crushed to a paste
10 cups of water
2 tbsp ghee
Saffron colour (optional)
¼ tsp ground fenugreek
Salt to taste
1 tbsp ground coriander
1 tbsp ground cumin
1 tbsp chaat masala (tangy spice blend)
1 tbsp red chilli powder
1 tsp turmeric
1 tbsp garam masala
2 onions, peeled, sliced and fried in ½ cup of vegetable oil

Seasoning and Garnish
Chaat masala
Fresh coriander leaves
Green chilli, finely chopped
Julienned ginger
Sliced lemon

400g beef eye fillet, trimmed
1½ tbsp potato starch
5 tbsp water
2/3 tsp salt
1½ tbsp peanut oil
2½ cups water, extra

4 fresh shiitake mushrooms, sliced
60g snow peas, trimmed
4 yellow squash, sliced

How to make Thai chicken basil stir-fry or Gka Prow Gkai, a recipe by Rachada Mahamontri, from SBS Food Safari show.

This recipe is for one of the favorite dishes of the Thai people. The chicken can be substituted with pork, beef, squid, shrimp or seafood. This dish is often served at breakfast with a deep-fried egg, sunny side up, on top. One particular favorite is to make it with ground pork and lots of Thai chillies. Make sure you use Holy Basil,, as it goes especially well with pork.

Ingredients

2-3 tbsp peanut oil, for stir-frying
10-12 cloves garlic, finely chopped
2-3 shallots, thinly sliced
500g boneless chicken thighs, cut into small pieces
10 Thai chillies, cut into very thin rounds
2 small kaffir lime leaves, finely shredded (optional)
2-3 tsp black soy sauce (the semi-sweet kind), or to taste
2 tbsp fish sauce, or to taste
1 cup fresh Thai holy basil, or Thai sweet basil leaves
and flower buds
Dash of ground white pepper

Sindhi Biryani

Ingredients

1kg goat meat, boneless and cut into large cubes
500g basmati rice
100g natural yoghurt
3 medium tomatoes, cut into thin wedges
Vegetable oil
3 medium potatoes, boiled until tender and cut in half
3 medium onions, thinly sliced
3 tbsp fresh ginger, minced
1 tbsp garlic, minced
10 cloves
5-6 green cardamom pods plus 8 to cook rice
4-5 cinnamon quills
1 tablespoon dried red chilli powder
½ tbsp turmeric
½ tbsp paprika
5 bay leaves
1 tbsp coriander powder
2 heaped tsp cumin powder
2 tsp cumin seeds
8 to 10 dried plums
1 tbsp salt
8 -10 black peppercorns, ground
2-3 black cardamom pods
3 long green chillies, whole, plus 1 finely sliced
1 bunch coriander, chopped
1 bunch mint, chopped
1 tbsp saffron, soaked briefly in milk
25g each of sultanas, slivered almonds, walnuts and cashew nuts
