Toor Dhal Tadka

250g toor dal (yellow split peas)
1 litre water
1 tsp turmeric powder
6 cloves garlic, crushed
1cm piece ginger, crushed
Salt to taste
2 tbsp vegetable oil
1 tsp mustard seeds
2 tsp cumin seeds
2 to 3 dry chillies
8 to 10 curry leaves
Chilli powder
Pinch of asafoetida powder

Shimeji Mushrooms
Welsh Onion
Mustard

Soup Stock: 1200ml Water (5 U.S. cup), 10cm Kombu Kelp (4 inch), 20g Dried Bonito Flakes (2/3 oz), 3 tbsp Soy Sauce, 3 tbsp Mirin

Note: Kombu Kelp and Dried Bonito Flakes can be substituted for granulated instant dashi.

½ kg potatoes, peeled and quartered
100g fresh red medium chillies, seeded
100g shallots, peeled and roughly chopped

5 candlenuts
40g fresh turmeric, sliced
15g ginger, sliced
2 tbsp vegetable oil, plus extra for frying the curry paste
2 stalks lemongrass, bruised
25g galangal, roughly chopped
1 litre coconut milk
2 tsp ground cumin seeds
2 tsp dried ground coriander
1 tsp fennel seeds, roasted, then ground
1 cinnamon quill
1 whole nutmeg, crushed
5 cloves
15g shrimp paste, roasted and crushed
1 tbsp salt
4 tbsp sugar

½ tsp tandoori food colouring (optional)

Ingredients

360cc Rice for 7 Onigiri (1.52 u.s. cup)
Note: Molding rice when it is still warm makes it easy to form onigiri into a desired shape.
2 sheets of Toasted Nori
1 piece of Lightly-Salted Salmon
50g Sliced Short Rib (1.76 oz)
1 tsp Soy Sauce
1 tsp Sugar
Grated Ginger

1 leaf of Pickled Hiroshimana
Boiled and Dried Baby Sardines
Toasted White Sesame Seeds
Umeboshi – Pickled Plum
Okaka – Dried Bonito Flakes Moistened with Soy Sauce

Mud crab, well washed and chopped into sections
2 brown onions, peeled and roughly chopped
8 red chillies
Belacan, thumb size piece
½ tbsp vinegar
6 tbsp oil
1 tbsp tomato paste
400ml tomato puree
4 tbsp light soy sauce
½ tsp salt
4 tbsp sugar
Water
¼ tsp corn or potato starch, mixed in ½ cup of water
1 egg
Coriander leaves, to garnish
